Recipes-Breakfast



Have you heard of the cookbook Deceptively Delicious? It contains recipes that help get more fruits and veggies into your children's (and yourself!) meals.

I am obsessed with the Oatmeal (with pumpkin) recipe. Delicious! It is a filling and tasty breakfast. It has 388 calories a serving, 6g of fiber and offers 12g of protein.

Here is the recipe for what I like to call Pumpkin Oatmeal




Pumpkin Oatmeal (serves 2)
Ingredients:
1 cup milk (I use 1%)
1/4 cup firmly packed light or dark brown sugar
1/4 cup canned pumpkin puree
1 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
1 cup old-fashioned oats
2 teaspoons natural peanut butter
dried fruit and nuts (optional)
Pure Maple Syrup, for serving

1. In a small saucepan, combine the milk, sugar, pumpkin, vanilla, and cinnamon.  Bring to a gentle boil and stir in the oatmeal. Reduce the heat and simmer for 2 to 3 minutes, until the oatmeal is soft and creamy.  Stir in the peanut butter.

2. Spoon the oatmeal into bowls, sprinkle with dried fruit and nuts, and drizzle warm maple syrup on top.

So yummy!
