Recipes-Main Dish

Baked Spicy Mac & Cheese

Ingredients:
1 lb pasta (cavatappi is best, but any pasta works)
Salt and pepper
Milk- approx 3 cups
Flour- approx 3 cups
4 tbsp butter
1 brick Pepper Jack cheese
1 can rotel
Directions:
*Preheat Oven to 350 degrees*
1) Make the sauce.. This works best if you shred the cheese before hand, add 1 cup flour and 1 cup milk, and 4 tbsp butter, and add cheese slowly, as this melts and thickens, add more milk, cheese, flour etc until you've got a good combination thick/creamy sauce. Fold in salt and pepper, and 1 can rotel to sauce. 
2) Boil pasta until it's al dente. Remove from water, strain, and put in a cooking dish.
3) pour cheese sauce over pasta, mix..
4) Cook approx 35 mins (times vary w/ ovens), take out, let cool. Enjoy!
